The Countdown begins…

Recently, many of you know I decided to quit my job as a College Instructor. There were a variety of reasons that led to my decision but the number one reason was that I want to bake. I want to bake cupcakes, wedding cakes, birthday cakes, pastries, creams, fillings, sculptures, spun sugar…I could go on forever! I want to bake things I cannot pronounce such as  viennoiserie (a type of dough that is made into a bread). I want to learn French so that I can understand what all of this means and maybe even pronounce it!

My goal is to create a blog of my baking journey. There have been many supportive people who have helped me to come to this decision and I would like them to see the journey that I am going to take. My path will begin March 7, 2016. My classes will be from 8-2 each day in Costa Mesa with the extremely talented STÉPHANE TRÉAND. He is from France of course and he has been named one of the top ten pastry chefs in America. He has won a ton of awards throughout the world. He is best known for his Chocolate Sculptures that you can check out on YouTube. My classes will only have 12 students. I am won of those lucky individuals who will have the opportunity to learn from this amazing Pastry Chef.

If you are so inclined, I invite you to take this journey with me and hopefully you will be able to see all of the wonderful creations I will make. I want to thank everyone for their love, support, and kindness. This was one of the bests decisions I have ever made and I am truly overjoyed.
